Easy Leftovers Dahl

Here at Fitfish we love a quick and healthy recipe for an easy weeknight meal.

This easy leftovers dahl recipe is so simple – and delicious too!

  • Serves 4
  • Prep time: 5 minutes
  • Cook time: 30 minutes

INGREDIENTS

  • 1 can chickpeas & juice
  • 125g dry red lentils
  • 1 diced onion
  • 800ml vegetable stock
  • 1tsp of each of: ginger, cumin, turmeric, coriander, curry powder
  • whatever leftover veg you have, diced

METHOD

  • Using a wok or large frying pan cook the onions and spices for a couple of minutes
  • Add the chickpeas, lentils, stock and any leftover veg
  • Simmer for 30 mins on the hobServe with chopped coriander

This can also be cooked in the slow cooker for approximately 4-6 hours on low.
