Easy Leftovers Dahl
Here at Fitfish we love a quick and healthy recipe for an easy weeknight meal.
This easy leftovers dahl recipe is so simple – and delicious too!
- Serves 4
- Prep time: 5 minutes
- Cook time: 30 minutes
INGREDIENTS
- 1 can chickpeas & juice
- 125g dry red lentils
- 1 diced onion
- 800ml vegetable stock
- 1tsp of each of: ginger, cumin, turmeric, coriander, curry powder
- whatever leftover veg you have, diced
METHOD
- Using a wok or large frying pan cook the onions and spices for a couple of minutes
- Add the chickpeas, lentils, stock and any leftover veg
- Simmer for 30 mins on the hobServe with chopped coriander
This can also be cooked in the slow cooker for approximately 4-6 hours on low.
