Juicy Date and Berry Cake

  • 250g chopped dates
  • 150g dried berries, cherries, cranberries
  • 25g desiccated coconut
  • 200g oats (medium sized, the kind you make porridge with)
  • 2 tea bags
  • 1 egg
  • 1 tsp baking powder


  1. Preheat the oven to 180 degrees/gas mark 4
  2. Put dates and berries in a bowl and cover with boiling water
  3. Add 2 tea bags
  4. Soak for 10-20 mins
  5. Remove tea bags
  6. Add oats, egg, coconut and baking powder
  7. Mix all ingredients together
  8. Transfer to a lined loaf tin
  9. Cook for 40-50 mins or until and inserted skewer comes out clean
  10. Cool and cut into 10 slices
