Gluten Free Apple, Cinnamon and Date Cake

Serves 12

“A tasty cake everyone can enjoy”


  • 100g chopped dates
  • 15g desiccated coconut
  • 1/2 tin sliced apples (190g) or 1 sliced large eating apple, cut into bite sized chunks
  • 2 decaffeinated tea bags
  • 50g quinoa flour
  • 60g gluten free brown flour
  • 1 egg
  • 1 tsp ground cinnamon
  • 2 tsp all spice
  • 1/2 tsp baking powder


  1. Pre heat oven to 180 deg C/gas mark 4/ 350 deg F
  2. Put the dates, coconut, tea bags and apples into a bowl and cover with boiling water
  3. Leave to soak for 20 minutes
  4. Meanwhile mix the quinoa flour, gluten free flour, cinnamon, all spice and baking powder together
  5. Fold the date mixture and the flour mixture together and pour into a lined loaf tin.
  6. Bake for 45 minutes or until inserted skewer comes out clean
  7. Allow to cool in tins for 5 minutes and then turn onto a cooling rack to cool before cutting into 12 slices.
