Carrot Cake Balls
Who doesn’t love carrot cake?! Bring back that taste in a healthy way with these snacks! They are approved by adults and kids alike and a great addition to lunch boxes.
Ingredients
- 150g oats ground
- 100g dates, chopped small or ground
- 20g seeds, ground
- 1 medium carrot, blended to a pulp
- 1 tsp cinnamon
Method
- Combine 100g oats and all of the other ingredients together in a bowl with a spoon or your hands
- Add the remaining oats until the mixture is mouldable (you may not use all of the oats depending how big your carrot was)
- Roll into balls and freeze until firm (approx 30-40 mins)
- Store in an airtight container for 2-3 days in the fridge or keep in the freezer and thaw as needed (only takes a few minutes until they are ready to eat but some people like them cold and some room temperature)

Theses are really nice , filling and easy to pull just how many you need From the freezer defrosts in about an hour or give them 10 mins in microwave ! Great snack x

What sort of seeds do you use in these please?

I used linseed and sunflower - Aldi do a good ground packet mix of them. Doesn't really matter though as long as they are ground!
