Apple and Raisin Cake

Serves 12

“A tasty treat packed full of goodness!”


  • Black tea (decaf or caf)
  • 300g raisins
  • 2 dessert apples chopped finely (such as royal gala)
  • 200g oats finely ground in blender
  • 20g almonds finely chopped or blended
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 egg


  1. Preheat the oven to 180 degrees/gas mark 4
  2. Put raisins and apples in a bowl and cover with the hot tea
  3. Soak for 10-20 mins
  4. Remove tea bags (if not done so already)
  5. Add the oats, egg, cinnamon, almonds and baking powder
  6. Mix all ingredients together
  7. Transfer to a lined loaf tin
  8. Cook for 45-55 mins or until and inserted skewer comes out clean
  9. Cool and cut into 12 slices
