Seriously Speedy One Pot Spaghetti

In our last blog we shared some practical tips for eating healthily even when we are busy. One of our favourtie suggestions is to make simple and speedy one-pot meals, and so we wanted to share a super-simple recipe for a healthy favourite that takes just 2 minutes to prepare and 16 minutes to cook. This recipe serves on person, but you can scale up as needed.
INGREDIENTS
- 1 tin chopped tomatoes
- 80g whole grain spaghetti
- 1 garlic clove
- chopped basil leaves (optional to serve)
METHOD
- Put all ingredients into a saucepan on the hob and simmer for 16 minutes.
- Garnish with basil and enjoy!
- You can also add any chopped up leftover veg you want to use up in the last 5 minutes of cooking.
