One Pot Chicken and Butternut Tagine

Serves 4

“A very simple tasty supper for all of the family!”

Ingredients

  • 4 chicken breasts
  • 1 small butternut squash peeled and chopped into bite sized chunks
  • 2 onions chopped into bite size chunks
  • 20 pitted black olives
  • 4 tsp runny honey
  • 100g no soak prunes
  • 2 cinnamon sticks broken in half
  • 2 tsp dried coriander
  • 1200ml chicken or vegetable stock

Method

  1. Preheat the oven to 160 deg
  2. Put all ingredients into a casserole dish and put into the oven for 2 hours. Or cook in slow cooker for 4 hours on high or 8 hours on low.
  3. Serve with green salad or quinoa with raisins stirred through
