One Pot Chicken and Butternut Tagine
Serves 4
“A very simple tasty supper for all of the family!”
Ingredients
- 4 chicken breasts
- 1 small butternut squash peeled and chopped into bite sized chunks
- 2 onions chopped into bite size chunks
- 20 pitted black olives
- 4 tsp runny honey
- 100g no soak prunes
- 2 cinnamon sticks broken in half
- 2 tsp dried coriander
- 1200ml chicken or vegetable stock
Method
- Preheat the oven to 160 deg
- Put all ingredients into a casserole dish and put into the oven for 2 hours. Or cook in slow cooker for 4 hours on high or 8 hours on low.
- Serve with green salad or quinoa with raisins stirred through
