Gluten Free Apple, Cinnamon and Date Cake

“A tasty cake everyone can enjoy”
Ingredients
- 100g chopped dates
- 15g desiccated coconut
- 1/2 tin sliced apples (190g) or 1 sliced large eating apple, cut into bite sized chunks
- 2 decaffeinated tea bags
- 50g quinoa flour
- 60g gluten free brown flour
- 1 egg
- 1 tsp ground cinnamon
- 2 tsp all spice
- 1/2 tsp baking powder
Method
- Pre heat oven to 180 deg C/gas mark 4/ 350 deg F
- Put the dates, coconut, tea bags and apples into a bowl and cover with boiling water
- Leave to soak for 20 minutes
- Meanwhile mix the quinoa flour, gluten free flour, cinnamon, all spice and baking powder together
- Fold the date mixture and the flour mixture together and pour into a lined loaf tin.
- Bake for 45 minutes or until inserted skewer comes out clean
- Allow to cool in tins for 5 minutes and then turn onto a cooling rack to cool before cutting into 12 slices.
